Everyone has provided good information in this thread. After talking with Don Yungling and seeing his SP GS1 in person, I got new religion and decided to go the fabricated assembly route. It's just so liberating. Use castings if they are available but if their not then just "build it"! $....

not to open Pandora's box, but please do not believe for a minute that a CNC anything is required to build a steam locomotive. Nice to have - absolutely...but required? Nah.... Wes, Thanks for your input. I have watched that video, as well as many others of his, and it is very helpful. Especially for getting destroyed bits back close to the correct geometry. I have the Darex setup that my dad sent along with the grinder and it will hold up to 3/4" drills. See attached...
