Wrap a piece of .010-.015 brass around the ball, leaving extra at each end, which is then bent up like rabbit ears. Grab the ears with pliers and tighten the grip, now chuck it in the lathe.
Grind a small flat to drill a spot, then drill and thread.

I have a HT oven and do small parts often. 4140PH is hardened to about 26HRC and needs no further heat treatment, and can be machined with HSS or carbide. A buddy of does clocks, and unwinding coiled springs is a daily occurrence. He has an old blanket that wraps around the spring, and he clips the wire through a hole in the blanket. No drama.

Take the 1" coupling and have a 3/16 keyway cut, a 10 minute job. As long as its not a blind hole, if a 2 piece coupling is what I assume it is.

Just a question, what do you need to hold Number drill size work, if just shortening the length, absolute accuracy is not needed, if center drilling, a threaded collet would be a better choice, as the surface finish on threads is not conducive to concentric. A couple things to also consider. How far from the throttle valve is the turbine , air has less viscosity than steam, possible excessive distance allows the steam to expand to much before entering turbine. Have you put a pressure gauge just before the turbine entry, compare pressure air vs steam. I ...
