The 2 pole switch on 3 phase is the same as switching 220 with a single pole switch. I've seen it done, it works, and as long as someone doesn't connect themselves between the hot leg and ground all is well.

An article I recently read on electric motors explained the rpm ratings. With no slip a 4 pole motor would run at 1800 rpm as dictated by the 60 Hz line frequency. As you increase load you get increased slip and the rpm drops. The rated rpm is what the motor should spin at rated output.

A local glass shop should be able to cut a circle for you. They have wet belt sanders to take the disk to a smooth finished size. We had dozens of 1 1/2 to 2 inch disks cut for dump bailers to place cement on top of plugs in oil and gas wells.
