Here's my experience with doubling the A3. 1) Any part dimension that's inside the frame or is a longitudinal dimension can be doubled. 2) Any lateral part that extends across the frame needed to be split. A pickup truck bed works for many locos. My A3 plus tender just fits in 6'.

On the A3, Kozo shows how to build most of the fittings, the axle pump, the whistle, the water glass, etc. I chose to buy fittings, glass, whistle, injectors, boiler. So there's a big cost difference possible trading $ for time.

You could certainly scale up a 5" gauge loco to 7.5" gauge.
