I know copper, steel, etc. can't be used in a nickle acetate bath because of contamination. What about stainless steel clips and wires??

Dunno! But I expect that it may not be acceptable, either. It's primarily iron.

I know that a lot of titanium is used in plating systems, as it's inert. Is it acceptable for nickel plating?

I don't know about nickel plating specifically but stainless steel is used in many other plating systems.
